Add water to within 1/2" of top of crockpot (mine takes 16 cups, but you can add up to 18 during cooking if it gets too dry). Periodically during the 8 hours of cooking time I stir the mixture because my crockpot gets warmer on one side than the other. This also makes for a creamier oatmeal than a chewy oatmeal. At the end of 8 hours I portion this out into 1 cup portions, refrigerating half & freezing half.
