The ingredients for jay's Quick Oatmeal Pancakes are:

.5 C Quaker Oats - Quick 1 MInute (This is what I used. I do not know how this will work with Old Fashioned or instant)
1 large, whole Eggland's Best or cage-free brown egg (70 calories)
.5 C Silk LIght Soymilk - Plain
1 tsp baking powder
1 tsp Vanilla extract
1 tsp ground cinnamon
1 packet of sweetner (I used Sweet 'n Low)


How Do I Make jay's Quick Oatmeal Pancakes?

Here is how you make jay's Quick Oatmeal Pancakes:

Combine everything except milk into small or medium mixing bowl. I personally used a hand blender. But you might try a blender or food processor. Blend together to break up the egg and mix it well in the oatmeal. Then slowly add milk and continue to blend until smooth. You might have to stop and scrape the oatmeal from the sides and into the mixture. Blend well until smooth. The mixture will be grainy due to the oatmeal texture but smooth enough to hold together.Spray griddle with nonstick cooking spray and preheat. I used Butter-flavored Pam. Or you may spray a nonstick skillet or Wok. I prefer a griddle because it lays flat. Using a soup spoon (or serving spoon), spoon two spoonfuls of batter onto the griddle. When the edges and bottom turns brown, flip. You do not need to press down. Repeat until all are done. Serve while hot and enjoy!The batter yielded 5 servings. Pancakes were about 3.5 inches in diameter. So you can save a couple for a snack if you like. Optional: Serve with fresh strawberries, blueberries, or warm apples. I used Cary's Sugarfree Syrup (30 calories/serving). Also you may try Smuckers Sugarfree Syrup (30 calories). Please share your feedback. I loved these. YUM! You can really taste the cinnamon.
