How Do I Make Oatmeal Flax Pancakes?

Here is how you make Oatmeal Flax Pancakes:

Soak the oatmeal (or rolled oats) in 1 cup of the milk in a small bowl for 15 minutes. Combine all the dry ingredients in a medium bowl. In a small bowl, whisk together the eggs, egg whites and the remaining 1-1/2 cups of milk.Add the dry ingredients to both bowls of wet ingredients and stir.Heat a non-stick skillet over medium-high heat and coat with cooking spray. Pour about 1/2 cup of batter per pancake onto the hot skillet and cook 2 minutes (or until tops are covered with bubbles and edges look cooked). Flip and cook 2 minutes or until bottoms are lightly browned.Notes: The recipe I used says this makes 12 pancakes, but I only got 10 pancakes out of it when I used 1/2 cup batter per pancake.
