Evening before, mix oats, flaxseed, and buttermilk in a small mixing bowl.Refrigerate. In a separate container, mix flour, sugar, baking powder & soda, and the salt. Cover and save for the morning.In the morning, preheat skillet on medium.Add the oil to the oat mixture & stir. Break egg in small bowl & beat with fork, then stir into the oat mixture. Add the dry ingredients prepared the night before and stir wellUse 1/4 cup measure to pour mixture into preheated pan to make one pancake. When the top side is bubbly and puffed up, and the underside is brown, turn the pancake.[Mine didn't bubble much. When the edges were dry and the bottom was brown, I flipped them]. Brown the second side and transfer to a plate. Continue until all of the batter is used up.
