While the oats are soaking, whisk together the oats, flours, wheat germ, brown sugar, baking powder, baking soda, cinnamon, and salt in a large bowl. In another small bowl, beat the two eggs, canola oil, and applesauce together. When the oats are done soaking, mix together the egg mixture with the buttermilk mixture and add it to the dry ingredients. Stir until just combined (do not overmix or the pancakes can end up tough). Cover the batter with cling wrap and put in the refrigerator overnight.
