Here is how you make Overnight Oatmeal Buttermilk Pancakes:

Combine the buttermilk and oats in a small bowl and let soak for 20 minutes. While the oats are soaking, whisk together the oats, flours, wheat germ, brown sugar, baking powder, baking soda, cinnamon, and salt in a large bowl. In another small bowl, beat the two eggs, canola oil, and applesauce together. When the oats are done soaking, mix together the egg mixture with the buttermilk mixture and add it to the dry ingredients. Stir until just combined (do not overmix or the pancakes can end up tough). Cover the batter with cling wrap and put in the refrigerator overnight. Alternatively, you can mix this up in the morning and make right away.Heat a large griddle or nonstick skillet over medium heat. Spray with the nonstick spray and spoon out 1/2 cup batter onto the surface. Cook for 2 minutes, then flip and cook until the pancake is cooked through and golden on both sides. If the pancakes look a little too dark, turn the heat down a little.Repeat until all of the batter has been used.Serve with a little real maple syrup, berry sauce, applesauce, or fresh fruit.
