1/3 cup Craisins (dried cranberries)

Here is how you make Irish Oatmeal w/ Strawberry and Dried Cranberry Compote:

To make the oatmeal bring water to a boil. Add a pinch of salt. Slowly stir in the steel cut oats. When oatmeal begins to thicken (about 5 minutes), reduce heat. Simmer uncovered for about 30 minutes (or desired consistency) stirring occasionally. Note: Steel cut oats are best prepared are the stove top. Microwaving is not recommended. Yields four (4) 1 cup servings.For the compote: In a sauce pan place all of the compote ingredients. Bring to a boil, stirring frequently. Cool to thicken slightly. Yields four (4) 1/2 cup servings.Spoon warm compote over oatmeal and enjoy! You can make a batch ahead of time to enjoy all week.
