Heat small omelet pan to med. heat. Chop ham, pepper & onion. Beat egg & egg whites together with a touch of water. Add S&P if desired. Once pan is ready add olive oil, then add egg mixture. When eggs are almost soft set add ham & veggies. Once set, place cheese slice in the center, fold omelet on to a plate.
