Here is how you make JPs Basic Omelet:

I use this 'base' to make one omelet.Spray non-stick skillet with cooking spray and set on medium heat. While the skillet is heating, chop vegetables (I used asparagus today) into rough dice or bite-sized pieces. While vegetables are saut?ing, mix one whole large egg with 2 egg whites in a small bowl and season as desired whipping the mixture to evenly distribute the seasoning. As vegetables finish saut?ing, add the seasoned egg mixture. Move the mixture within the skillet to evenly distribute the eggs and vegetables. Once the omelet begins to firm (think of a full moon), add the feta to one side and fold the other side over the cheese (now think of a half moon).Leave in skillet to melt/soften the cheese to desired consistency, flipping as needed, then serve.Number of Servings: 1Recipe submitted by SparkPeople user JWPIPES.
