Here is how you make Western Omlet Cups:

Preheat oven to 400 degrees. Spray 2 non-stick muffin tins with baking spray (I use a 12-cup tin and a 6-cup tin). In a bowl, place potatoes, onion, pepper, bacon, and cheese. Toss with a spoon until combined. Spoon into prepared muffin cups, filling level with tops of cups. In a large measuring cup, combine milk, egg substitute, salt and pepper. Stir until blended, then pour a small amount, about an ounce, in each cup, until liquid comes nearly to the top of each muffin cup. Bake at 400 degrees for 30 minutes, or until a knife inserted in the center comes out clean.
