1/4 to 1/2 tsp vanilla
dash salt (optional)
butter for cooking (I used one pat for the whole batch of 12 small 'cakes')

Here is how you make Pancakes - Almost Paleo:

Combine all ingredients except butter. Heat a non-stick griddle or large pan to medium heat and melt butter. Drop by rounded tablespoons onto griddle. Turn when first side is lightly browned. Finish browning other side until 'set'. The 'cake' will feel firm yet springy to the touch. This takes only a few minutes on each side at medium heat. Watch them closely so they don't burn.
