Baking Powder, 4 tsp
Granulated Sugar, 3 tbsp (or less, I used this much to counteract the tartness of the berries)
1 Large egg
skim milk 1 1/2 cups
Cinnamon Applesauce 1/3 cup (You could use regular applesauce-I like the taste of cinnamon and blueberries.)
Blueberries, fresh, 1.5 cup (If you don't like the taste of full berries, you could puree the blueberries in a blender.)
(Sometimes I add 1 tsp of vanilla-not figured into nutritional values.)

Here is how you make Blueberry - Cinnamon Pancakes:

1) Mix flour, baking powder, salt & sugar in large bowl. Set aside.2) Beat egg. Add milk & applesauce.3) Add egg mixture to flour mixture. Stir until just mixed, leaving batter slightly lumpy.4) Fold in blueberries.5) Pour batter onto heated, ungreased, non-stick griddle, 1/4 cup at a time. (Use Pam to coat griddle, if needed.) 6) Cook pancakes until edges are bubbled.
