My family loves pancakes, so I wanted to make a healthier version. This is it. They will walk around eating these as a snack. I incorporated flaxmeal for fiber and always-good-for-you Omegas & MUFA's. I also prefer the added calcium, protein and richness of skim milk to water. We enjoy them so much as is, even my kids skip the butter & syrup now - a healthy bonus.

Here is how you make Blueberry Flaxmeal Pancakes:

Warm non-stick griddle on low heat. Hand whip milk and egg. Add pancake mix and flaxmeal and blend well. NOTE: Be sure you use GROUND flaxMEAL, the body can't digest whole flax seeds so the fiber and Omegas do no good. Gently fold in blueberries. I use 1/4 C measuring cup with lip to dip and pour onto griddle and increase heat to med-low. When a few bubbles have formed & popped, I turn. This is usually at the deep golden brown stage (they hold together better for the walk-around snack phase:). You may prefer flipping as soon as bubbles form for lighter color.
