1/4 cup dried blueberries

How Do I Make Blueberry Pancakes for Two?

Here is how you make Blueberry Pancakes for Two:

Wisk egg white in medium mixing bowl till frothy. Add milk and pancake mix; stir well breaking up clumps with spoon. Stir in dried blueberries. Heat small skillet over medium to medium-high heat. Spray with cooking spray. Pour 1/4 cup of batter into center of skillet. When bubbles begin to break on the surface, turn over with spatula and cook other side. Watch the side you're cooking to make sure you don't overcook it and adjust the burner heat as necessary. Once both sides are golden brown, remove pancake to a plate. Continue cooking batter by 1/4 cupfuls till you have all 4 pancakes.
