Here is how you make Polenta Pancakes:

Mix all wet ingredients first and then dry ingredients, then blend together. Batter may be a little lumpy. I mix mine all up in the mixer to get it as smooth as possible. Then I cook them in 1/3 cup increments on a cast iron griddle. These could easily be cooked on a non stick surface with a cooking spray as well for less oil.
