This recipe makes 24 small 3-4 inch pancakes. Serving size is 4 pancakes, so it makes 6 servings. If you make larger pancakes, adjust the serving size.The night before you plan to have pancakes ass the starter, lukewarm water, salt, sugar, and flour. Let set in warm place overnight. In the morning, take out 1/2 C dough to set aside (see note following recipe) and pour rest into a mixing bowl. Add egg and soda. Bake as other pancakes on greased griddle until golden brown.Note: Put the 1/2 C dough (also called sponge) into sourdough pot (a covered glass or pottery container) to keep as a starter. Store at room temperature. To keep fresh, use every 2-4 days. May be kept slightly longer in refrigerator. If starter is over a week old, begin a new starter.
