I hate having to convert recipes for two people, so I'm tying to create and add more recipes for those cooking for two. These are a modified version of the Strawberry Pancakes: Un-chained Recipe (I added cinnamon and vanilla extract and simplified the flour to one type). These are very flavorful - add whipped topping or drizzle with your favorite syrup (not included in recipe) but they are also great plain!UPDATE: I've used this recipe to make waffles and they turned out GREAT! They make 3 large waffles.

6-9 frozen or fresh strawberries, chopped to make 1 cup
1 cup whole wheat flour (I use King Arthur White Whole Wheat)
1 tablespoon baking powder
1 cup lowfat buttermilk
1 teaspoon canola oil
1/4 cup egg substitute (I use Egg Beaters)
1 tablespoon vanilla extract
1 tablespoon brown sugar (packed)
1 teaspoon granulated Splenda
1 tablespoon water
1/4 teaspoon ground cinnamon
1/4 teaspoon salt


How Do I Make Strawberry Pancakes FOR TWO?

Here is how you make Strawberry Pancakes FOR TWO:

Beat together sugar, eggs, and all other wet ingredients in a medium mixing bowl. In a seperate small bowl, stir together flour, baking soda, salt, cinnamon. Add dry ingredients to liquid mixture, beating at low speed just until mixed. Add strawberries last, and beat in a low speed just until mixed.Bring a skillet to temperature over medium-high heat. If non-stick pout mixture out and start cooking pancakes. If non-non-stick use a little canola oil or cooking spray before pour out batter.Cook each pancake for 3-5 minutes on each side (or to desired doneness) then flip and repeat for other side. Continue until all batter is used up - then divide pancakes by two and enjoy! Serving Size:?Makes 6 pancackes total, 3 for each person!
