In large bowl, combine flour, sugar, baking powder, baking soda, salt, and cinnamon. In another bowl or measuring cup, combine milk, egg, oil, vanilla. Add to dry mix, and stir until large lumps disappear. Grate fresh apple (I leave skin on for more fibre). In large pan or griddle sprayed with cooking spray, drop 1/3 cup and cook until bubbles form and edges brown slightly. Turn and cook for another minute or two until golden. Makes 8 pancakes.
