Here is how you make Fruit Whole Wheat Pancakes:

In a big bowl mix the dry ingredients, add the egg, milk and the freshly ground nutmeg. Mix well but don't overdo it. Spray a hot pan with cooking spray and add small amounts of mixture. Flip over and cook until both sides are golden brown. These pancakes will be flat like crepes. Serve hot.Apple sauce can be substituted for any other ripe fruit in season (peaches, pears, bananas) as long as the fruit is pureed in a blender. The sugar can also be substituted by Splenda to reduce even more the calorie count per serving.
