First of all, it's really hard to mess this recipe up. I pretty much wing it every time. This recipe uses whole wheat and soy flours to add a little more fiber and a few less carbs to a basic pancake. Makes about 10 pancakes. I usually like to make them really thin and eat them with a slice of lean turkey breast and some sugar free raspberry jam. (Kinda like a Monte Cristo, I guess) Sorry no photos, my family eats them too fast!

Here is how you make Whole Wheat and Soy Pancakes:

Mix dry ingredients, then add wet ingredients all at once. You can add more or less water depending on how thick you like your pancakes. Stir about a minute to blend. Heat griddle to medium high heat. Spray with cooking spray. Pour by scant 1/4 cups onto griddle. After about a minute and a half, flip and cook other side about a minute or so.
