How Do I Make Last Night's Breakfast Potato?

Here is how you make Last Night's Breakfast Potato:

Bake potatoes however you normally would, making sure they stay in their skins and are not overcooked. --I like to use russet potatoes for this. Leave baked potatoes out overnight, somewhere they can air out at room temperature. --I tend to just leave them in the oven. The next morning, remove the outer skin (the paper-thin part that will have bubbled up after sitting out). It should slide and tear off easily. Just use your fingers to pinch and pull it off. --NOTE: Nearly all the nutrition of the potato is in its skin, so if you can use it in a recipe (think, mashed potatoes or potato soup) you absolutely should. We just can't use it in this recipe since it will char in your skillet and ruin the flavor of the potatoes. Once skin is removed, GENTLY slice potatoes into lengthwise pieces, however thick you want. The thinner you slice them the faster they will crisp up. Place large skillet (or use a griddle) over medium high to high heat and add olive oil to coat the pan, then add your potato slices. --You can use as much heat as you like since the potatoes are already cooked through, so all we're shooting for now is to crisp up the surface. Now just keep an eye on them, as they cook, turning frequently, until they are as crisp as you like them. Enjoy! --I like to eat these with ketchup and Tobasco. The breakfast sausage I use is Morningstar Farms breakfast links dipped in "In The Raw" agave. When I don't have access to farm-fresh (guaranteed non-fertilized eggs) I'll purchase "The Happy Egg" eggs since they are free range and have the deepest color yolks and richest flavor I've seen from a store.Serving Size: For my family, four potatoes serves two.
