Boil Potatos whole until just before they are completely cooked. Cool and cut them into 1/2 inch chunks set aside.Heat the olive oil in a large skillet with the garlic, after a couple of minutes add onions and salt, after onions start to look transducent add the chopped jalapeno then potatos and meat. After the meat is cooked in about 10 minutes start adding the eggs in one at a time mixing into the mixture.
