4 whole wheat Arnold Select Sandwich Thins
2 eggs, large (Recommend Eggland's Best) or 1 cup egg product
1 cup egg product or egg white
1/4 c fat free milk
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
1 tbsp Fleishmann's Olive Oil Spread and 1 tsp Olive Oil
1/4 c finely chopped green onion
1/4 c red or green bell pepper
1/4 c Turkey Bacon or 3 slices or
1/2 cup ground Turkey Sausage (2 balls about golf ball size)
1 cup Frozen Hash Browns
1 c shredded Mexican cheese (2%) or Colby & Monerey Jack, or Fat Free Shredded Cheddar Cheese
1/2 cup Thick and Chuncky Salsa

Here is how you make Mini Meat and Potato Breakfast Pizza's (Reduced Fat):

Toast Sandwich Thins in toaster on lowest setting. Combine eggs in med. bowl. Add milk, garlic powder, salt & pepper. Mix on medium speed for 1 minute, or using wire whisk for 5 min. In large non-stick skillet over medium heat, melt butter and olive oil. Saute onions and bell pepper. Add meat and hash browns and saute until meat is cooked and hash browns are lightly browned (about 6 to 8 min.). Add egg mixture and stir occasionally until eggs are half cooked and beginning to firm, about 2 minutes. Spread lightly toasted Sandwich Thins with half cooked egg mixture. Top with shredded cheese and bake at 375 for 10 minutes or until eggs are firm and bread slices are a crisp golden brown. Sprinkle with Salsa and let cool for 5 minutes before serving, and enjoy! For even faster cooking time, chop veggies and saute meat, hash browns, onion and bell pepper the night before or add eggs and cook ahead of time, but omit baking time and let cool before refrigerating or freezing. (To cut the fat content and make it a low fat meal, substitute whole eggs for 1 c egg product, cut the amount of meat in half, and use Fat Free Shredded Cheddar Cheese.)
