2 Eggs Scrambled
2 Brown and serve sausage links
1 small russet potato, shredded
1/4 onion, sliced thin
1 roma tomato, diced
1/4 c shredded colby jack cheeese
1 TBSP Olive oil
salt and pepper to taste
2 (8-in round) flour tortillas


How Do I Make Sausage, potato and egg breakfast burrito?

Here is how you make Sausage, potato and egg breakfast burrito:

Peel one small russet potato. In a food processor shred the potato and 1/4 onion. Whisk the eggs until well blended, set aside. In a small skillet, heat 1 TBSP oil, add potato and onion mixture, season with salt and pepper. Heat on med high temp till brown and crispy. Remove from pan and set aside. In same skillet, scramble the eggs, season to taste. Cook until set. Add shredded cheese and heat till cheese is melted. Meanwhile, heat the sausage in the microwave for one minute. Slice in half lengthwise then dice. Dice roma tomato.Warm tortilla in paper towel in microwave 15 sec. Assemble as follows: Layer in each tortilla 1/2 of the Egg/cheese mixture, 1/2 the potato/onion mixture, add 1 of the diced up sausage links and 1/2 of the tomato. Roll into burrito.
