1/4 cup onion, chopped (small)

1 egg, whole
1 egg white
1-2 tsp water
1/2 oz cheddar cheese. shredded

Here is how you make Eggs and Potatoes:

Spray small skillet with cooking spray. Heat pan over med. heat until warm. Add peppers and onions. Cook until soft, about 5 min. Add potatoes and cook until heated through, about 5 min. In small bowl, combine whole egg, egg white and 1-2 tsp. of warm water. Whip with a fork until frothy and add to pan. Stir the mixture constantly with a rubber scraper, making sure to scrape the bottom clean. The eggs will cook very fast.
