1 can pumpkin, canned (not pie mix)
1 cup Almond Milk, Vanilla
1 tsp vanilla
2 large egg whites

Here is how you make Vanilla Pumpkin Protein Bars:

Preheat oven to 350 degrees. Prepare a 9 x 13 baking pan by spraying with non-stick cooking spray.In a large bowl, combine dry ingredients: oats, flour, flaxseed, protein powder, cinnamon and brown sugar. Stir to mix well.In a separate mixer bowl, combine wet ingredients: pumpkin, almond milk & vanilla. Slowly add the dry ingredients in parts, mixing well as you go. Last, add the chocolate chips.In a clean bowl, whip the egg whites until stiff and fluffy. Add the whipped egg whites by hand to the rest of the mixture, folding lightly until incorporated.Press bar mixture into 9x13 pan. Bake 20 min. Remove from oven and cool in pan for 10 min. Cut in to 12 equal size bars. Cool completely on a wire rack. Wrap individually.
