Here is how you make Tracy's Mini Quiches:

Preheat oven to 400 degrees1. Saute onion and bell pepper in large frying pan with olive oil on medium high heat until onion is translucent.2. Add mushrooms and fresh spinach. Stir until spinach is fully wilted. Remove from stove.3. In separate bowl, whisk together eggs, milk, flour, baking powder and seasoning.4. Mix vegetables into liquid mixture.5. Spray a 12-cupcake pan with non-stick spray or olive oil spray (I had leftover mixture enough for one more).6. Fill to nearly the top (mixture will grow slightly during cooking).7. Cook for 20 minutes. Remove from oven and let set in pan for 5 minutes.
