The ingredients for Jennifer's Low Carb Omu-"Rice" Filling are:

12 oz Tyson boneless, skinless chicken breast (I used chicken breast tenders because it was quicker to cut into bite size pieces)
4 cup Green Giant Riced Veggies - Cauliflower Medley (this is one bag, frozen)
2.5 tbsp Butter, salted (enough to fry the chicken and then the "rice")
2 tbsp Onion flakes (this is what I had on hand - certainly will be better with fresh onion)
1 tbsp Garlic powder
1 tsp Fish Sauce (for some umami)
3 tsp Pepper, white (or to taste - we like a LOT of white pepper)
6 tbsp VEGGIE KETCHUP (true made foods) (by KYLIEG320) (this is for cooking since it has more of a tomato sauce flavor)
1 tsp Pink Himalayan Sea Salt (to "marinate" your chicken before cooking)
4 tbsp Heinz Reduced Sugar Ketchup (1 TBSP per serving for that extra ketchup flavor on top)


How Do I Make Jennifer's Low Carb Omu-"Rice" Filling?

Here is how you make Jennifer's Low Carb Omu-"Rice" Filling:

Cut chicken breast into small bite sized pieces and lightly salt the chicken. Set aside for a few minutes while prepping other ingredients.Cut up onion if using fresh (recommended - about 1/4 cup of diced onion)In large skillet, melt butter and add onion on medium heat.Once onions get slightly soft, add garlic powder and white pepper. Do not let garlic burn.Once the butter gets seasoned with the onion, garlic, and pepper add chicken and cook until just cooked through (it will go back in the pan after the veggies are cooked).While chicken is cooking in butter, cook the riced cauliflower medley in the microwave per the instructions. You may want to undercook it a little - we will cook it along with the ketchup in a little bit.Once chicken is cooked through, remove from frying pan. Add cauliflower medley to same frying pan and toss with butter/chicken juices. Add the fish sauce and toss. Let the "rice" dry out just a little by spreading it thinly across the entire skillet and letting it cook for about 2-3 minutes.Move cauliflower mixture to one side of the skillet and add the ketchup. Stir it around on the bottom of the skillet so that it reduces slightly and combines with the little bit of sauce in the pan. (Note - if you are doing this with reduced sugar ketchup or even regular ketchup which will drastically increase the carbs, you will need to reduce the ketchup even more. You want it more gooey and flavorful. Something about this veggie made ketchup really gives it more depth that lends itself well to this recipe, so if you can get it I definitely recommend it in this kind of usage.)Once the ketchup has reduced to a good texture (maybe 1-2 minutes, it's pretty quick), stir in your cauliflower medley and combine.Add the cooked chicken back to the pan including the resting juices and combine.You can thaw your peas and carrots by running water over them for about a minute, but I've found that they come out fresher if you toss them in frozen. Just add them for the last 2-3 minutes of cooking and they will turn out perfect. Divide into 4 servings - you can mold them like you would with a traditional omurice or I just put each serving into it's own bowl. You can top with an omelet or not. You can also decorate the top with extra ketchup like a traditional omurice - roughly 1 TBSP of ketchup is included in the recipe.
