The night before soak in a bowl:

1⁄2 cup sunflower seeds
1⁄4 cup pumpkin seeds
1/4 cup almonds

In a second bowl, soak:
3 Medjhool dates
1/4 c water

In a third bowl, soak:
1/4 cup chia seeds
1/4 cup dry coconut
1 3/4 cup water
1/4 tsp cinnamon (or more!)

The next morning:
Drain and rinse your seeds/nuts from the first bowl and place in the blender. Place dates and soaking water in the blender. Add chia seed mixture to blender. Blend briefly so as to retain some texture. Transfer to bowls and top with fresh fruit of choice optional) and an extra sprinkle of cinnamon.
