1/2 large onion, peeled and diced
1 c. grated cheddar cheese

Here is how you make Spinach Frittata with Bacon and Cheddar:

Preheat oven to 450. Cook bacon in cast iron skillet. Remove and drain - reserving 2T. of bacon drippings. Add diced onion and saute for 2-3 minutes. Turn off heat under pan, add spinach and stir until wilted. In glass bowl, mix eggs until frothy - add milk. Pour egg mix into skillet and sprinkle bacon pieces in. Stir. Turn the heat back on under skillet to medium and cook for 5 minutes or until egg begins to set. No stirring!Add the grated cheese, sprinkling evenly over the top.
