Egg, fresh, 7 extra large
Colby Jack Cheese, 4 oz, shredded
Spinach, frozen, 1 package (10 oz) yields
Onions, raw, 1 cup, chopped
Garlic powder, 1 tbsp

Here is how you make Breakfast on-the-go Wrap - Spinach Onion:

Thaw spinach and squeeze out excess water. Saute onion and spinach in non-stick pan until dry. Meanwhile beat eggs in bowl. Add eggs and garlic powder to mixture and scramble. Cook until very dry (I like my eggs just set but this recipe calls for them dry so the wrap it's soggy).Place 1/2 ounce of cheese in a line down the center of each wrap (leave 1 inch on each end of line to fold in at the end). When egg/spinach mixture is done, divide evenly and place over the cheese on the wrap. Fold in the edges of each wrap (at the top of the line of cheese and egg mixture then roll up and place on a cookie sheet.Preheat oven to 350 degrees. Bake on middle rack for about 7 minutes then flip each wrap and bake another 7 minutes. (This will dry out the tortilla so that when you microwave them, they won't be soggy). When done, turn off oven, open door and leave pan in oven. Allow to cool. When cool, remove from oven and wrap each one indiviidually in waxed paper. Place them in a freezer bag and freeze. To serve, remove one from the freezer bag and place on a microwave safe plate. Microwave for 1 minute. Flip and then microwave for 1 more minute. (Microwave times may vary). Unwrap from wax paper and enjoy ( Caution, they may be hot!
