Saute mushrooms and onions in pan coated with cooking spray over medium heat until soft (about 5 minutes). Remove from pan. Respray pan with cooking spray. Add egg whites seasoned with black pepper. Cook until almost set, add spinach, mushroom and onion mixture and feta cheese.
