Preheat oven to 350. Using cooking spray, cook onion and garlic, about 3 minutes. Stir in spinach (thawed and drained well). Reduce heat to low. In a large bowl, beat egg beaters, egg whites and milk until light yellow and frothy. Pour egg mixture over spinach. Cook 5-7 minutes until egg mixture is cooked on bottom and almost set on top.
