Microwave 1 tablespoon of the jelly for 30 seconds to make liquid. Add egg and milk to jelly. Mix into the dry ingredients. Depending on the density of your flour you may need to add water slowly to make it a good consistency for pancakes. Mix strawberries and remaining tablespoon of jelly and microwave for 1 minute or until warm. Over medium to medium high heat pour half of batter for one pancake. Cook as usual for pancakes. When both pancakes are done pour the strawberry mixture over the pancakes. You may want to add more Splenda to the strawberry mixturebefore if your strawberries are not sweet.
