2 Morningstar veggie sausage links (I sometimes substitute turkey pepperoni, shredded roast chicken, or leftover veggies)
1/4 cup shredded part-skim mozzerella cheese, divided
few dashes hot sauce (regular Tabasco has the lowest sodium I've found yet; Chipotle Tabasco has more)
2 teaspoons plain, non-fat Greek yogurt, divided
1 teaspoon fresh chopped green onion or chives, divided
(optional) fresh chopped cilantro

Here is how you make Fast Morning Tacos:

This is a very fast breakfast for when I want something hot and am craving cheese. It takes longer to gather the ingredients than to cook! (Optional) Toast the tortillas: With cooking tongs, toast the tortillas over an open flame burner until very slightly browned/charred on both sides and starting to blister. Do this while cooking the veggie sausage.Microwave the frozen veggies sausage links 1 minute on HIGH.Put tortillas side by side on dinner plate. Top with one link each. Divide cheese between the two. Microwave 45-55 seconds on HIGH or until cheese is just melted. Add Tabasco to taste.Put a small teaspoon-sized dollop of yogurt on each. (If you haven't tried Greek yogurt yet, it has more the consistency of sour cream.)Sprinkle with chopped green onion. Fresh cilantro is also a nice addition if you have it. Roll up and eat! It's not very glamorous or gourmet, but I find them oddly addicting...plus, I love the fact it's a one-plate meal.Serving Size: Makes 1 serving of two 6" tacos.Number of Servings: 1Recipe submitted by SparkPeople user MEGAN_OS.
