Spray 1 tsp. olive oil into a non-stick skillet. Heat skillet and saute 2 mushrooms and .5 oz of diced turkey. After sauteing set aside. Beat 2 eggs, put into the skillet on medium heat. Sprinkle mushrooms and turkey into the eggs. Then add .5 oz of mozzarella cheese ( if desired). Folding the egg as necessary. Top the omelet with salsa , if desired.
