2 Tbsp Extra virgin olive oil (used Newman's Own Organic)
3-6 cloves garlic, VERY thinly sliced (should be nearly transparent)
1 c. diced green pepper (1 large)
1/2 c diced Roma tomato, seeded removed (about 2-3 tomatoes)
1 c diced sweet vidalia onion (about 1 large)
2 tsps. capers, drained
4 FRESH basil leaves, loosely torn
1/2 c 2% milk shredded cheddar cheese (used Kroger)

Here is how you make Vegetable Egg White Frittato:

1. Heat 2 Tbsp olive oil over low heat; allow to heat for 1-2 minutes; add garlic. Allow garlic to saute in olive oil on low for 5-8 minutes (do not increase heat, for this increases chance of garlic burning)2. Add onions, green peppers, tomatoes and capers; allow to saute for 8-12 minutes, increasing heat from low to medium after 6 minutes; REDUCE heat ONLY IF garlic starts to burn3. Remove sauteed vegetable mixture from pan and pour into a strainer that has been placed in a pan; allow vegetables to drain, allowing oil to drop off into pan4. Spray skillet with pam and heat over low heat; pour 1 1/2 cups egg white substitute into pan and add loosley torn basil leaves; allow to cook for 5-6 6 minutes5. Add vegetables to egg white mixture and increase heat to medium to med-high. All to cook until eggs are done; top with shredded cheese, allow to cook until melted6.
