5 eggs, beaten

1 9" pie crust, blind-baked

Here is how you make Veggie and Bacon Quiche:

Preheat oven to 375. Blind bake pie crust in pie tin for 15-20 minutes, or until it is light golden brown. Roast the potato, eggplant, and onion in olive oil while the crust is baking, about 15 minutes. Season with salt and pepper to taste. Mix together roasted vegetables, bacon, cheese, and spinach. Pour this mixture into the pie crust, then add the milk and eggs (combined) over it. Arrange sliced tomato over the top of the quiche.Bake for 35-45 minutes, or until a knife inserted into the center of the quiche comes out clean. Let rest for 10 minutes. Serve either hot or cold.
