Ingredients:
1 onion, diced
1 zucchini, diced
1/2 red bell pepper, diced
3 tbsp. butter
2 cups raw baby spinach
6 slices thick-cut bacon, cooked and chopped finely
1 cup whole milk
6 eggs
basil, oregano, salt, garlic powder

Instructions:
Saute the onion, zucchini, and bell pepper in 2 tbsp. butter until browned and caramelized. Beat the milk, eggs, and spices together. Butter a 8x8 glass baking dish with the remaining 1 tbsp. butter. Combine the cooked veggies, spinach, and bacon and spread evenly in the bottom of the dish. Pour the milk/egg mixture over the veggies and bake at 400 F for 45 minutes. I served it with chopped avocado on top and fried potatoes on the side.
