Take out a small skillet. Coat it with Pam butter spray, or I can't believe it's not Butter spray. Add scallion and spinich. Cook until onion is somewhat clear. (About 5 minutes.) Add mushrooms, and cook until they are reduced in size, maybe two or three minutes. Pour beaten eggs over ingredients, sprinkle cheese over the eggs. Put a cover on the pan, have the heat on the stove at low, and let the eggs cook. Probably less than five minutes.
