1 Tbs. garlic olive oil (I used Wegman's basting oil)
10 large eggs
1/3 cup skim or 1% milk (nutritional info is for 1%)
1 medium yellow onion, sliced thin
1/2 cup chopped broccoli
6 Tbs. fresh salsa (I got mine at Costco)
3 oz. Baby Bella mushrooms (a handful)
1 tsp. lemon pepper
salt to taste

Here is how you make Very Veggie Fritatta:

Heat oil over medium heat in a 10 inch ovenproof skillet, saute onions for 5 min and add broccoli, mushrooms and drained salsa. Cook 4 min. Beat eggs, milk, lemon pepper and salt together. Add to hot pan and cook a few minutes pulling egg in from edges.Place skillet in a 350 degree oven for 10 min.
