This omelet is wonderful with fresh steamed veggies and feta cheese. (substitute shredded cheese of your choice if desired). This is a great 1,2 punch to satisfy and keep the sugar monster at bay. LOL I then top with 1-2 T. salsa and 1-2 T. Greek yogurt **these are not included in values as they are an added option.

1 lg. egg + 2 egg whites (whisk together with Mrs. Dash+ skim milk)
1 T. skim milk
1/2 tsp. Mrs. Dash (use more or less according to taste)
1-2 baby carrots sliced or chopped
1/8 C. cauliflower
1/8 C. broccoli
1 T. sliced celery (somewhat thin)
1 T. chopped green onion
1/8 C. rough chopped yellow,red,orange or green pepper (whatever is your fave.)
1/8 C. rough chopped tomatoes
2 T. feta cheese crumbles

1/4 tsp. olive oil enough to just brush on pan to ease removal of omelet

Here is how you make Fabulous Fresh Veggie Omelet:

Whisk together whole egg + egg whites + milk+ Mrs. Dash in small bowl or soup mug. Set aside.in non-stick 8 " skillet steam broccoli, cauliflower, and carrots (add small amount of water and cover til desired softness. This takes a very small amount of time.) Remove to plate.In same skillet over medium heat brush olive oil. Add whisked egg mixture. Let eggs start to set-up before adding:onons+ peppers+celery+tomatoes+ feta cheese. After the above additions add steamed vegetable that were set aside. Fold omelet in half. (if it is still not cooked well enough at this point turn off heat and cover for approx. 1 minute.) Slide onto your plate and ENJOY!!**Add toppings of salsa,greek yogurt,cheese as desired.
