Here is how you make Super Veggie Omelet:

In small skillet, sweat veggies and oregano in oil, transfer to plate. Beat eggs, pour into pan. Lift edges to allow raw egg to run under cooked egg around sides of pan. Add salt and pepper to taste. Grate the asiago onto the egg, then place veggies on just one side (one half) of the omelet - like a half moon. When egg is about set, slide omelet onto plate, veggie side first, folding bare side of omelet over onto the veggies.
