Approx 1/2 cup of spinich chopped find. Take 2 large eggs, whip with 2 tbls 1/2 % milk. Use olive oil spray on pan, heat on med. Put in egg mixture, let set for about a min, then swirl around the pan, let sit again for a minute or until you see whites coming up on bottom of pan. Then on one half put your veggies, let sit a little while, and then fold over non veggie side ontop of veggies, flip and then serve. I topped with less then a tbls of salsa, and sourcream.
