These waffles are full of good stuff: whole grains, healthy fats from flax and almonds, protein and a healthy dose of iron. They're not too sweet and great with a drizzle of maple syrup and fruit, soy yogurt, apple sauce or whatever else you'd like. See notes at end of recipe instructions! What Are The Ingredients For Multigrain Waffles (100% Whole Grain) Recipe? The ingredients for Multigrain Waffles (100% Whole Grain) are: 1 cup rolled oats1/4 cup cornmeal 2 T. ground flax 1/4 c. raw almonds 1/3 c whole wheat flour 3 T. cornstarch 1 1/2c. water 1/2 cup apple juice 1/4 c. soy yogurt 1/2 t. salt 1 t. cinnamon How Do I Make Multigrain Waffles (100% Whole Grain)? Here is how you make Multigrain Waffles (100% Whole Grain): In a blender, combine rolled oats, cornmeal, flax, almonds, flour and cornstarch. Blend until ground and combined. Add water, soy yogurt, juice concentrate, salt and cinnamon, and blend until well-combined. Let rest for ten to fifteen minutes--meanwhile, plug in and preheat your waffle iron. When batter has rested and iron is preheated, spray or brush the iron with oil. (You could use nonstick spray; I have a reusable pump bottle filled with canola oil that is also a good option if you have one, and worth getting if you don't.) Add the recommended amount of batter for your iron. These take about twelve minutes in my waffle iron on a medium setting, but your mileage may vary; a good rule of thumb is to wait until steam is no longer coming out of the iron and then gently lift the lid. These will pop right out of a properly greased and preheated iron when they're done, so if there's a lot of resistance, give it a few more minutes and try again. A few notes: the serving size here is based on one 7" belgian waffle per serving. However, if you have the waffles as a meal with soy yogurt and fruit or apple sauce, you could easily have half a waffle as a serving and still have plenty of food, so keep that in mind. Obviously if your waffle iron is a different size, you would also get different results. Even after letting it sit and thicken for 10 minutes, this batter is thinner than most waffle batters, so use a little bit more than you usually would per waffle. Additionally, you can use 2 Tablespoons of apple juice concentrate instead of juice and increase the water to 2 cups.
