1. Preheat oven to 350 degrees. Grease 2 loaf pans.2. Cream butter and sugars together until light and fluffy.3. Beat in mashed bananas.4. Beat in eggs one at a time.5. Mix in sour cream, pineapple, vanilla, and (all but 2 Tbsp.) coconut. Mix until completely incorporated.6. In a small bowl, blend together the flours, flax seed meal, soda, powder and salt. Add to the wet ingredients. Mix well.7. Divide evenly into 2 prepared loaf pans. Sprinkle each top with 1 Tbsp. raw sugar and coconut (this give the tops a nice crunch).8. Bake at 350 degrees for 50-60 minutes or until a toothpick inserted into the middle of each loaf comes out clean. 9.
