2 TBS ground flax seeds
1 large egg
1/4 Splenda (can use regular sugar but will change the nutritional facts)
1/2 soy milk (can substitute milk of choice)
2 TBSP safflower oil (or canola oil)
3 ripe bananas smashed
1/3 cup crushed walnuts
1/2 cup Ghirardelli 60% Cacao Chips

Here is how you make Banana Cacao Nut Muffins (gluten free):

Preheat oven to 350 degrees. Mix dry ingredients together in a large mixing bowl and set aside. In a separate bowl beat egg then add sugar, milk and oil. Mix well. Smash bananas and add to egg mixture. Mix well. Pour liquid mix into flour bowl, mix well. Add Cacao chips and fold. Put into lined muffin tins and bake for 15-18 minutes.
