1/4 cup olive oil (surprisingly good)
1 egg (large) or equivilant of Egg Beaters
3/4 cup mashed bananas
1/2 teaspoon vanilla

1/2 cup whole wheat flour
1/2 cup oats (I used Quick or Old Fashioned) (I've even used Uncle Sam's cereal and it turned out great...gives ya a good cleaning though)
2 Tablespoons flax meal (ground flax)
1/8 teaspoon baking soda
1/4 teaspoon salt
3/4 teaspoon baking powder
1/4 teaspoon cinnamon

1/8 cup of chopped walnuts (or more,more,more)


How Do I Make Healthy Banana Nut Muffins?

Here is how you make Healthy Banana Nut Muffins:

Preheat oven to 375 degrees. Spray muffin pan with cooking spray (makes 6 muffins)Blend olive oil and Splenda together, Add all other wet ingredients and blend. Add dry ingredients and blend until moistened. Add walnuts gently at the end.Pour into muffin tins (or muffin liners). Bake about 25 minutes until toothpick comes out clean.
