Add lemon juice (or plain white vinegar, which is what I had on hand), yogurt, milk and sugar. Stir well to combine.In a separate bowl, combine flours, baking soda, baking powder, salt and walnuts.Add dry mixture to banana mixture and stir until just combined (do not over-mix).Spray or wipe a muffin tin with oil. Divide batter evenly among cups and bake until a toothpick inserted in the top comes out clean, 15-20 minutes.Makes 12 muffins.Note: Don't bake these muffins in paper cups unless you plan to add at least 1/2 c. oil/butter in place of 1 banana and the yogurt. They will stick terribly. Also, the muffins (being as low fat as they are) will taste better once they've cooled -- I promise.
