Here is how you make Spinach-Black Bean Omelet:

Melt the coconut oil in a pan. Add leeks and sautee until a little bit clear. Meanwhile, mix up egg yolks, eggs, and milk. Add to pan and cook, lifting up cooked edges with a spatula and tilting to let uncooked egg mixture slide underneath cooked parts. When top looks close to done, add cheese to 1/2 of top.
