Using a pastry cutter or two knives to cut the butter into the flour, until the pieces resemble coarse crumbs. If you don't have a pastry cutter, you can do it the really old fashioned way and rub the butter into the flour with your fingers. Takes longer but really produces a fine, flaky biscuit.Once you have the butter mixed in, make a well in the middle and pour the 2/3 cup milk in all at once. Stir the mixture carefully until the milk is just mixed in and the mixture "follows" the spoon around the bowl. Do not overmix here.Put the flour mixture onto a floured cutting board and work the dough gently until it forms a ball. Pat it out with your hands into a circle about 10 inches wide, then fold over in half, then half again to make a quarter circle. This makes the layers that make the biscuits rise so nicely. Repeat the patting out and folding over at least 3 more times. Do not overwork the dough, however.Pat the dough out a final time to about 3/4 inch thick and cut with a glass or biscuit cutter. Place biscuits into an ungreased pan with side touching slightly. Put into the oven for 10-12 minutes. Serve immediately with more ICBINButter and honey or syrup!Makes about 10-12 biscuits.
